flour tortillas
Flour Tortillas are great for just about anything! Egg wraps, tacos, quesadillas, tortilla pizza, quick easy cinnamon rolls, homemade crunch wraps, even PB+J. There is so much you can do with tortillas, especially when you don’t have time to bake bread, or you have run out and aren’t going to the store for another day or two. They are quick and easy to make and extremely easy to get creative with.
Rolled out tortilla

This recipe makes eight ten-inch tortillas. There are few tricks I learned over the hundreds of tortillas I have made, and a lot of screw ups while making them. One is that oil is key to the right consistency tortilla, but if you don’t have it and are making tortilla pizza or quesadillas or something that it doesn’t need to wrap nice and smooth it is still completely doable. I have not used oil at all, and have substituted with bacon grease before also. They both work just fine that way and will still get the job done in a pinch, but oil is key.
Tortilla Pizza
-Tortilla pizza is a big favorite in our house, especially me when I don’t have yeast or its too hot to run the oven or don’t have propane for the grill-
Also to keep those tortillas soft and pliable for wraps make sure you use a dish towel to cover your tortillas, I use a slightly damp one and put it under the plate I put my cooked tortillas on and the when one comes off the stove I just drape the other half of the towel over the tortillas until the next one comes off the stove. This keeps them warm and soft.
Ingredients:
3 cups of flour
½ cup vegetable oil
1 cup hot water
2 tsp baking powder
1 tsp salt
You will want start by heating the water, I use a tea kettle and heat to almost a whistle then set to the side. Then mix all your dry ingredients the flour, baking powder, and salt in a large mixing bowl. Then I put my cast iron pan on the stove on medium heat, you dont have to use cast iron you can use a regular skillet or what ever you have just play with the heat and see what works best for you and your pan of choice. While the cast pan is heating add the ½ cup of oil to the already mixed dry ingredients, and then add the 1 cup of water.
Stir and fold with a wooden or rubber spatula until a sticky dough forms, then coat your hand in oil scrape the spatula clean then begin to fold the dough and need until a smooth dough forms. Once formed divide into 8 equal sized balls. If you have little ones who dont need a full sized tortilla you can always cut a couple of them in half and make smaller ones for the little ones, it works well for me. Then roll out the dough balls till they are evenly thin and thickness you choose, I am a big bread person so I like my tortillas a bit thicker than store bought, but if you are making tortilla pizzas or quesadillas a little bit thicker to me is always better.
-Eight yummy tortillas-
Move the tortilla to the heated cast pan and start rolling the second one, the first one should be flipped in about 60 seconds or just until it starts to brown slightly, it will take some playing with your heat and your pan. Next flip the first one and finish rolling out the second tortilla. When the first one is done you can put the next one on then repeat this process till all are cooked. When you take the cooked tortilla off the cast place on your plate don’t forget to cover with the damp towel.
