Easy Cheesy enchilada
I love comfort food, and I love any food that you can add rice to bulk up for larger quantity without going out of budget! Enchiladas are easy to make, and you can make them very inexpensively (or go all out too you want to) There are a couple ways to cook these and I like to add this information because everyone has a different cooking situation. Like for me I use a grill as an oven ninety percent of the time because I have a gas guzzling beast of an oven, so most of what I cook or bake I use the grill as my oven because it more efficient. You can make and assemble these in a casserole dish and cook them in the oven for 20-25 min (or grill) or you can assemble and take a large deep pan with a lid and heat rate on stove top on low heat till all cheese is melted, or you could use an air fryer I know a lot of people like to cook with those now, I have one myself but we don’t use it very often cause it uses a lot of power to run. You can also do one of my favorite ways to cook and that is over a fire in a dutch oven! Cook all your ingredient rate there in the dutch oven, assemble all your enchiladas put back in the dutch oven top with cheese and finish it off in the same pan you started! (I will have to make a video on this one) Either way you make it it going to come out delicious!
Ingredients:
2lbs chicken thighs (or chicken of your preference)
1 Bell pepper
1 medium sized onion
16oz jar of your favorite salsa
12oz nacho cheese
1 cup shredded cheese (or more if you want)
10 large tortillas (see my homemade tortilla recipe if you want to make your own)
3 cups of long grain rice (see your package for cooking instructions)
Directions:
-Cook 3 cups of rice according to package and set aside with lid on. It will be added to your chicken later.
-Cut your pepper and onion, and brown them and a pan with a little bit of oil, then add your chicken thighs and any seasoning of your choice (I love Cajun seasoning) cover and cook on medium heat for 15 min flipping half way through, or if you want you can dice chicken up before cooking and just stir a few times while cooking
-When chicken is done, cut into pieces or shred, then add your salsa and rice to the chicken and mix together
-Now you need to assemble your enchiladas, you're going to take a tortilla (if you are making tortillas, you can make them now so they are flexible, or make them before and wrap in a towel or tinfoil ) and put about a cup and a half of your filling in the center and wrap so both ends are closed (you can also leave open ends too! I just like to close them)
-Then line your casserole pan (or whatever you have) with your filled tortillas, spread your nacho cheese evenly across the tops of all your wraps
-Sprinkle your shredded cheese on top of that.
-cook in oven at 350 for 20-25 min or until cheese is nice and melted and bubbly
