I’m sure everyone remembers taco bells crunch wraps; I made a breakfast version! I’m sure I’m not the first person to do it, but here is how I make them and like anything else I make on here I always want you to know you should feel free to change add to and get creative with your food!
Ingredients: (made for family of six, 2 eggs each)
1 dozen eggs
4oz shredded cheddar cheese, or you can use sliced cheese (also try pepper jack, Swiss, or colby jack)
2 medium sized potatoes
tortillas (see homemade tortilla recipe)
1 pack of hot Italian sausage (you can use your favorite sausage)
1 pepper
1 onion
Cajun seasoning (to taste)
pepper (to taste)
garlic and onion powder (to taste)
Directions:
Slice your potatoes into thin slices, and coat in oil and toss in Cajun seasoning then cook till they become slightly crispy and set to the side on paper towel. Then dice up your pepper and onion.
In a cast pan, your favorite pan, or on flat top cook your cut up pepper, onion, and sausage and then remove it from pan but leave the greese.
mix eggs two at a time, and season with garlic, onion, and pepper to desired amount then pour your eggs into your pan and bring them in from the edges to the center of pan to form a circle about 5 inches, don’t worry if its bigger, eggs fold!
After you form your egg circle, flip to cook other side, and sprinkle with cheese and place tortilla on top. When egg has finished cooking flip the whole thing over egg, cheese, and tortilla and top with your sausage, pepper, onion mix and cover with your crispy potato and fold the edges of the tortilla in to cover the filling, hold together and flip to toast till it holds shape. Repeat this process till all are finished, and enjoy!!
